The Trinidad Seasoning pepper, also known as the Trinidad Pimento, is a popular cooking pepper in Trinidad and Tobago. Though similar in flavor and appearance to hot peppers, this variety has almost no heat. The flavor is fresh and complex, like a heat-less habanero. The fruits transition from light lime green to orange-red to bright red and grow to about 3 inches in length. The plants are highly productive. Seasoning peppers are a crucial ingredient in various Caribbean dishes and used to make traditional green seasoning.
