Callaloo, also known as amaranth, is a nutritious green eaten throughout the African Diaspora, typically cooked down in a stew. In the Caribbean, this plant stew is also called callaloo. In Yoruba culture, amaranth is called "tete" and is revered as the first plant to grow on earth, seen as the elder of all plants. This Red Callaloo has heart-shaped, green leaves with dark red veins.
