Ethiopian Blue Kale, also known as Habesha gomen, Abyssinian mustard, Highland Kale and Texsel Greens, is a leafy green originating from Ethiopia. The beautiful leaves are blue-green with some purple on the youngest leaves and on the stems. The greens have a tender texture, sometimes compared to Lacinato Kale, with a sweet, mildly garlicky flavor. They can be picked as baby greens or at full size, for use in salads or as cooking greens. This variety was introduced by Ethiopian tech-worker turned farmer Menkir Tamrat.
