Efo Shoko, also known as Lagos Spinach or Nigerian Spinach, is a variety of Celosia, used for its nutritious greens. It is eaten across West and Central Africa and East Asia, including parts of Nigeria, Benin, Congo, Cameroon, Indonesia, and India. The leaves are green to deep magenta. Harvest entire young stems, as the leaves, stems and flowers are all edible. If left unharvested, the plants grow lovely pink flower spikes and can reach 6-feet tall. Unlike other greens, Efo Shoko thrives in the heat and is resistant to most pests.
