The White Garden Eggplant, also known as Scarlet Eggplant or Gilo, is prized for its succulent, firm, slightly bitter fruits that are used in various recipes throughout West African and Southeast Asia. The fruit can be boiled, sautéed, or cooked in stews. Harvest the fruits when young, they should be pure white and around 3in long. The leaves are also edible, and very nutritious. The plants grow to be large sturdy bushes 4-5 ft tall.
