Fish pepper is a beautiful and delicious pepper with medium heat. It has green and white variegated foliage. The immature fruits are also variegated or fully white and mature to red. These immature white fruits were historically used by black chefs in Baltimore to flavor seafood dishes. It is a short, compact plant and produces many fruits about 2 inches long. This pepper is one of those collected by African-American painter Horace Pippin (1888-1946), and reintroduced by food historian William Woys Weaver.
